Chocolate chip oatmeal cookies
I baked load of cookies lately ^^, well it's Christmas, and new year, so it's time for giving!
Cookie is easy to make, pack and keep, so it's very suitable for this time of the year. One of the reason that I chose to make this cookie was, one of the reader asked me for the Chocolate chip oatmeal cookies recipe, as you know that I love both oatmeal and chocolate, but I never posted the recipe that has both of them in one piece, hehe.
Baking soft cookie can be tricky, but the most important thing that you have to care for is the finishing texture that you want. You can bake it until just done, then let it cool and become soft in the center or bake until fully set, and get crispy side and chewy center. Each people have their own ultimate kind of cookie (in their mind) so baking the cookie by yourself is the best way to get it.
I made double recipe (you can see from the photo, it's very large bowl, haha), it's easy to make load of the dough, and I got a lot of cookies for giving as a Christmas gift. You can double the recipe easily too.

115 g ......................... Unsalted butter
1/4 tsp ........................ Salt
1/2 tsp ........................ Vanilla extract
1 ................................. Egg
80 g ............................ Brown sugar
100 g .......................... Granulated sugar
100 g .......................... All purpose flour
1/4 tsp ....................... Baking powder
125 g .......................... Rolled oat
125 g .......................... Chocolate chips
Preheat an oven to 180 C
Line baking sheet with baking paper.
Beat the butter with salt and vanilla until smooth.
Add both kinds of sugar and beat to combine.
Put the egg into the bowl and beat to combine.
Sift the flour and baking powder into the bowl.
Pour rolled oat and chocolate chips into the bowl.
Fold to combine.
Scoop onto the baking sheet.
Bake for 15-20 minutes.
Let the cookies cool completely on the baking sheet.
Ready to enjoy!
