No Bake Blueberry cheese tart
After playing too much, (you can see from my last blog, haha), I think I need a rest.
So rather than making something that take 2-3 days to finish, I turned to something super easy, and I don't have to turn up the oven for this sweet too.
Because I have blueberry in the fridge (both jam, and fresh fruits) I choose to match it with cream cheese but you can use any kinds of fruit that you like (or have). As I said this dessert is very, very easy, it's a way of mixing what you have and turn it into something new and cute ^^. Next month, it's vegetarian eating festival (Kin Je) in Thailand, so I will start adding more vegetarian dish and sweet to the blog but don't worry, they have to be delicious too.

Cookie crumbs
40g ................................. Cookies (I use digestive biscuits)
20g .................................. Melted unsalted butter
Cream cheese filling
70g .................................. Cream cheese (soft)
25g .................................. Granulated sugar
30g .................................. Plain yogurt
60g .................................. whipping cream
1.7g (1 sheet) ................... Gelatin sheet
Filling
......................................... Blueberry jam
......................................... Fresh blueberries
Decoration
......................................... Whipped cream
......................................... Fresh blueberries
Crush the cookies.
Mix with melted butter.
Divide into two cups.
Place a piece of plastic wrap and level the top.
Refrigerate until ready to use.
Bloom the gelatin in ice cold water for at least 5 minutes.
Remove the gelatin from the water and squeeze lightly.
Heat the whipping cream in a microwave at 600W for 30-40 seconds, put the bloomed gelatin into the hot whipping cream and stir until melt.
Beat the cream cheese until smooth, add the sugar and beat until combine.
Add plain yogurt and whipping cream mixture, beat until smooth.
Spoon blueberry jam and place fresh blueberries on top of the jam.
Spoon the cream cheese filling over the jam and blueberries, shake lightly to smooth the top.
Refrigerate until firm.
Decorate with whipped cream and fresh blueberries before serving.
