Double peanut butter cookies
"Peanut butter again! " This is what my sister said, but you know I love it and want to eat it more, haha.
Last Sunday, I fell down and hurt my leg and my arm, and I couldn't do anything much for 3 days. All the time, I thought about food, and what I want to eat, -*-. At this moment I really want to eat something that I LOVE!, and it's Peanut butter.
I have a load of peanut butter recipes in my blog, and it will increase for sure. This time not only peanut butter cookies, but I add peanut butter chips into the cookies, and it means more peanut butter taste. But, if you don't have peanut butter chips, you can use roasted peanuts or chocolate chips too. The cookies will be soft when just coming out of the oven but firm up as they cool so be patient, hehe as you know that you will want to eat them as soon as you smell the delicious fragrance while they are in the oven.
You can eat it with anything you want, coffee, tea or milk and I believe that you will be happy with this little comfort cookie!!!!
Recipe: Double peanut butter cookies

50g ............................ Unsalted butter
75g ............................ Peanut butter(Crunchy type)
1/4tsp ......................... Vanilla extract
.................................... Pinch of Salt
1 ................................. Egg
50g ............................ Brown sugar
50g ............................. Granulated sugar
100g ........................... All purpose flour
1tbsp ......................... Baking powder
50g ............................ Peanut butter chips (or you can use chocolate chips or roasted peanuts)
Preheat an oven to 180C.
Line baking sheet with baking paper or Silpat.
Put butter, pinch of salt, peanut butter and vanilla extract into a bowl.
Beat to combine.
Add the egg and beat to combine.
Put both of the sugar into the bowl.
Beat to combine.
I use peanut butter chips, but you can use chocolate chips or roasted peanuts too.
Sift the flour and baking powder into a bowl with peanut butter chips.
Fold to combine.
Scoop with 5.5 cm scoop into the prepared baking sheet.
Bake for 13 minutes.
Remove from the oven, it will be soft at the center.
Let them cool completely or until them firm up.
