Berry Skillet Cake
You can't have too much of easy recipes ^^.
Because there are load of things in life that we have to (or must) do, well for me, I still have my work, as baking is my hobby, I don't want it to turn in to hindrance. When I want to enjoy making or eating, I can do it in no time and have a lot of fun with it.
Simple butter cake with berry, is one of the best thing that you can make in less than 1 hours (actual working time is around 15 minutes). And it's delicious enough to make you happy. You can use both fresh or frozen mixed berries, both of them will be yummy, for frozen berries, you don't need to defrost it, just use it straight from the freezer, anyway your cake may need 3-5 minutes more in the oven.
I think I really fall in love with taking photo right now, I know that I will need to practice a lot so if you find my photo strange (in some post) don't be surprised, as I want to try new technique all the time, ^^.

60 g ............................... Whipping cream
1 tsp .............................. Vinegar (or lemon juice)
110g .............................. All purpose flour
1/2 tsp ........................... Baking powder
50g ................................ Unsalted butter
1/8 tsp .......................... Salt
1/2 tsp ........................... Vanilla extract
100 g ............................. Granulated sugar
1 .................................... Egg
200 g ............................ Mixed berries (fresh or frozen)
6 g ................................. Granulated sugar, for sprinkle on top of the cake
Preheat an oven to 170℃
Butter the 20 cm pan and set aside.
Mix the whipping cream and vinegar together, let it rest for 15 minutes.
Sift the flour and baking powder together.
Beat the butter with salt and vanilla until smooth.
Add the sugar and beat to combine.
Add the egg and beat to combine.
Pour half of the flour mixture into the bowl, and fold to combine.
Pour the whipping cream mixture into the bowl and fold to combine.
Pour the rest of the flour mixture into the bowl with mixed berries.
Fold to combine.
Put into the prepared pan, smooth the top and sprinkle sugar over the cake.
Bake for 35 minutes or until the toothpick insert into the centre comes out with few dry crumbs.
