Lemon Bars
Sweet and tangy that's what I love about lemon bar.
Actually, I love lemon, its fragrance and taste, and if you remember one of my all time favourite dessert is lemon meringue pie ^^. Lemon is the best when it comes with richness from butter (and cream) and sweetness from sugar.
Lemon bar is easier to make than meringue pie, for me it's meringue pie in simpler form. The icing sugar adds more sweetness (well the same as meringue), but it depends on your taste, you can skip it if you think your lemon bar is sweet enough.
With its sweet and tangy taste serve it with a cut of hot tea is my best option.

Base
90g ........................... All purpose flour
60g ........................... Icing sugar
1/4 tsp ....................... Salt
65g ............................ Unsalted butter
Filling
4 ................................ Egg yolks
1 ................................ Egg
110g .......................... Granulated sugar
75ml .......................... Lemon juice
1 tbsp ......................... Lemon zest
1/8 tsp ....................... Salt
35g ............................. Unsalted butter
25g ............................. Whipping cream
..................................... Icing sugar for sprinkle over the bars
Line 18x18 cm pan with baking paper.
Put flour, icing sugar, and salt into a food processor bowl, process to combine.
Put the butter into the bowl.
Process until fine crumbs formed.
Pour into the prepared pan, and press to level the top, refrigerate for 30 minutes.
Preheat an oven to 180C.
When the base is ready, bake for 20 minutes.
While baking the base, make the filling.
Put egg, egg yolks, sugar, salt and lemon zest into a saucepan, whisk to combine.
Put the butter into the saucepan.
Place over low heat, and cook until thickened (about 75C in temperature).
Pass through a sieve into a jug.
Pour the whipping cream into the jug.
Stir to combine.
Pour into the hot base.
And bake for 10-15 minutes more.
Let it cool completely before cutting into pieces.
Sprinkle with icing sugar before serving.
