Almond Butter Cookies
I had a lot of orders from my mom's friend ^^, and it's fun to make them.
Because she wanted me to make some sweet for her grandchildren, and I'm happy to bake for them. The request is simple, using good quality ingredients (well, I always use them anyway), not too sweet and adding nut and high fiber ingredient in any recipe that I can ^^.
And yes, this recipe is one of the cookies that I made. Simple butter cookie with vanilla fragrance and sweetness from almond powder.
If you can, use good quality butter as it will make the fragrance of the cookie more intoxicated, and the taste of the cookie will be very, very delicious too. You can use other kind of nut instead of the almond too, just process the nut with the sugar until fine, with this way you can play a lot with this recipe, hehe.
Serve it with a cup of hot drink is my favorite way to enjoy this cookie.

125g ........................ Unsalted butter
1/2tsp ...................... Vanilla extract
125g ........................ Granulated sugar
1/4tsp ...................... Salt
1 .............................. Egg yolk
155g ......................... Almond powder
155g .......................... All purpose flour
Beat the butter until smooth, add the sugar, vanilla and salt, and beat to combine.
Put the egg yolk into the bowl and beat to combine.
Sift the almond powder and flour into the bowl.
Mix until smooth.
Divide the dough into 2.
Roll each piece into 4.5-5cmx17cm cylinder.
Wrap with baking paper.
Freeze for 1 hour.
Meanwhile preheat an oven to 180C, and line baking sheet with baking paper or silpat.
Cut into 7-8 mm thickness.
You will get 45-48 pieces.
Bake for 14-15 minutes, or until golden.
